I awoke this morning, not really sure of what to write about. I usually write about topics that are put on my heart to share with others, but there wasn’t anything coming to me. I didn’t stress it though! I still woke up at 5:30…still began my quiet time…and then BAM–inspiration…
Mornings are the most challenging time of day for me. I usually wake up feeling just as exhausted as I did when I went to sleep and have no choice but to get ready for my day. During my time away from work, I’ve adopted this routine that I plan on continuing upon my return. Doing each of these things in the morning has set me up for success thus far and I hope that it continues to when my daily physical demands are higher. Try it out for a week or so and let me know if it works for you!
I remember sitting across from my rheumatologist 7 years ago and hearing her say that my test results were consistent with what she sees in Lupus patients. Lupus? An autoimmune disease where the body basically becomes confused and begins to attack itself. Okay, so how do we cure this? There currently isn’t a cure for Lupus. It took quite some time for me to process that last line. This thing called Lupus was stuck with me now…a part of me and my everyday life. After several years of not speaking to one another (for no particular reason), I was invited to my cousin’s daughter’s birthday party that took place yesterday. Naturally, I was a bit apprehensive because I hadn’t seen her or her children in years, but I decided to make it and support her and her family regardless of any discomfort that I anticipated. While there, I saw my older sister who I also haven’t spoken to in years (for particular reasons). As I walked into the apartment, I approached my aunt (my cousin’s mother) to greet her–the look on her face was one of confusion. She didn’t recognize me…it had been that long. Moments later, there was a knock at the door–the last guest had arrived, my uncle, who I also haven’t seen or spoken to in years. I respectfully got out of my seat to greet him, “Well, hello sir!” He glanced at me, “Hello,” and proceeded into the kitchen to greet my sister and mother. He also didn’t recognize me. My thoughts began to settle on the realization of how divided my family is…

It’s that time again…meal prepping! This is one of my absolute favorite recipes to make when I need a ton of food to last for the week. For the earlier part of 2016, Sean and I signed up for Hello Fresh and out of all of their recipes, this one stuck with me! It’s a very simple take on a traditional meal that’s packed with nutrition! For a healthier option, you may choose to substitute regular pasta for gluten free pasta. Try it out and let me know how it goes! I hope you love it as much as I do!

When faced with challenging situations, how many of us have a tendency to quickly become overwhelmed and focus on how impossible things appear to be? *Clears throat—guilty! And this isn’t only true for major life situations. How about the small things? Like last night’s dinner perhaps…“Why is this jar impossible to open?! Mom! Help!” After a single attempt, I am filled with frustration because the jar fails to open when I want it to and immediately call for someone nearby to save me. I swear this happens every time! Unfortunately this time, no one was home, so I was forced to keep working at that jar until it finally budged. This got me thinking…we do similar things in big situations as well. After single attempts to accomplish a goal, if things fail to work out when or how we want them to, we call for rescue. In some cases we give up entirely.

Lately I’ve been noticing that I’m having a difficult time remembering information–dates, where i put things, tasks–and I’m a teacher! I’d write my to do list and lose it, commit to completing a task and forget its due date. Oh! Forget about the professional development meetings where I’d be asked to reflect on a lesson and have such a hard time remembering what I even taught! At first these occurrences seemed sporadic, then suddenly they became more and more frequent. I would laugh them off to hide the embarrassment, and in the back of my mind question what was happening to me.
One of my absolute favorite foods to eat for breakfast is oatmeal! I just love the convenience of being able to quickly pop it in the microwave (instant) or letting it settle in warm milk for a few minutes, and having a warm and filling meal that’s easy to eat. In addition to convenience, oatmeal has many health benefits! Studies have shown that oatmeal can lower your risk for high blood pressure, diabetes, and high cholesterol!
