Don’t forget to modify ingredients based on your specific health needs and taste preferences! For those of you who are gluten-free, you can substitute the panko breadcrumbs with a gluten-free option (Ian’s are pretty good)! Pile On The Sausages!
I hope meal planning has been going as well for you guys as it’s been for me! I really appreciate the time spent prepping on the weekends when I’m absolutely exhausted mid-week and the last thing I want to do is cook! As mentioned before, I really want to focus on being consistent and making this a lifestyle change rather than a fad. Therefore, I’m continuing to focus on super easy recipes that can be executed with minimal effort and time. This week’s recipe that I found is another “one pan”–I absolutely loved the chicken and veggie recipe from last week and thought to mix it up again! This is also a great gluten-free option. Jump Start Your Morning Right!
Mornings are the most challenging time of day for me. I usually wake up feeling just as exhausted as I did when I went to sleep and have no choice but to get ready for my day. During my time away from work, I’ve adopted this routine that I plan on continuing upon my return. Doing each of these things in the morning has set me up for success thus far and I hope that it continues to when my daily physical demands are higher. It’s that time again…meal prepping! This is one of my absolute favorite recipes to make when I need a ton of food to last for the week. For the earlier part of 2016, Sean and I signed up for Hello Fresh and out of all of their recipes, this one stuck with me! It’s a very simple take on a traditional meal that’s packed with nutrition! Veggie-Chicken Meal Prep? Yes, Please!
It’s been one week since I’ve launched my meal prepping and I have to say that it was a success! It was so nice being able to go to my fridge and put together a well balanced meal in less than 10 minutes. Lunches were painless, as I usually substituted carbs for a garden salad using ingredients that I already had in my fridge. After deciding to prepare a single package of the ground turkey meat and prepping for 2, I had to start cooking again on Thursday, but I think that’s still pretty good! If you are only prepping for yourself, you should have definitely been good for the week!

Approximately a year ago, I made the decision to transition to a gluten-free diet. My logic? I’d done some research on the impact of gluten on patients who suffer with inflammation and the vast majority of what I’d found argued that individuals with autoimmune conditions should remove gluten from their diets.
