I hope meal planning has been going as well for you guys as it’s been for me! I really appreciate the time spent prepping on the weekends when I’m absolutely exhausted mid-week and the last thing I want to do is cook! As mentioned before, I really want to focus on being consistent and making this a lifestyle change rather than a fad. Therefore, I’m continuing to focus on super easy recipes that can be executed with minimal effort and time. This week’s recipe that I found is another “one pan”–I absolutely loved the chicken and veggie recipe from last week and thought to mix it up again! This is also a great gluten-free option. Try it out and as always, please let me know how it goes for you!

One-Pan-Sausage-Veggies-with-parmesan

Ingredients

  • 2 large carrots ~2 cups
  • 2 red potatoes ~2 cups
  • 1 small-medium zucchini ~2 and 1/3 cups
  • 2 red peppers ~2 cups
  • 1 head broccoli ~1 and 1/2 cups
  • 16 ounces Smoked Italian Turkey or Chicken Sausage

Seasonings

  • 1/2 tablespoon each: dried basil, dried oregano, dried parsley, garlic powder
  • 1/2 teaspoon each: onion powder, dried thyme
  • 1/8 teaspoon red pepper flakes (optional)
  • 1/3 cup Parmesan cheese freshly grated (optional)
  • 4 and 1/2 tablespoons olive oil
  • fresh parsley, salt and pepper (optional)

Instructions

  1. Preheat the oven to 400 degrees F. Line a large sheet pan with parchment paper or foil (easy clean-up) and set aside.

  2. Prepare the veggies: *It is important to prep the veggies according to directions to ensure they all cook at the same time*

  3. Peel and very thinly slice the carrots.  Wash and (if desired, peel) chop the red potatoes. You want the pieces quite small here. (Try halving the potatoes and then cutting each half into 10-12 pieces)

  4. Halve the zucchini and then cut thick coins of zucchini. Coarsely chop the broccoli. Remove the stems and seeds from the peppers and chop into medium-sized pieces. Chop the sausage into thick coins.

  5. Pour all the veggies and sausage on the sheet pan.

  6. In a small bowl combine all of the seasonings and salt and pepper if desired with the olive oil. Stir to combine.

  7. Pour the seasoning & oil mixture on top of the veggies and sausage and thoroughly toss to coat.

  8. Place in the heated oven for 15 minutes. Remove and toss around the veggies and sausage and return to the oven for another 10-20 minutes or until veggies are crisp tender.

  9. Remove and top (if desired) with freshly grated Parmesan cheese and fresh parsley.

  10. Serve on top of rice or quinoa (if desired). Also great plain!

Wow, my internet is seriously slow tonight – I wanted to include the link about the gout and high-purine foods but that little circle was spinning, and I didn’t want my long post to crash and burn.   3. Well Joezette – that not only looks colorful, but tasty as well. I embarked on a healthy eating regimen about seven years ago – since 2010, no fried foods or fast food, and since 2011 no sweets at all. Gave up red meat for heart month in 2015. Between all the walking, I thought I was a poster child for taking care of myself and felt great at age 60. HOWEVER, in my zeal to eat healthy, since I am not a good cook, and live by myself, I started eating a lot of Amy’s Organic Soups – very tasty, and had lots of veggies, especially lentils and beans. Figured the latter was good for iron, since I only ate turkey and tuna (occasionally salmon) (canned for both). When the American Dairy Association said last year it was okay to consume full-fat dairy again, I stopped eating/drinking skim or low fat products. This February I had a gout flare-up in my foot. Now gout in a big toe is nothing, compared to what you endure on an everyday basis, and for me, I could not stand on my foot and it was very swollen – just like that, out of the blue.. I did not know what happened to my foot until I Googled it … saw the image of my foot. Classic symptoms – sudden flare-up. I read everything I could about gout – well, guess what? Eating turkey and tuna, beans and lentils (especially bad) and full-fat dairy … all these things raise your uric acid level. I drank some water, but not alot of it. I immediately stopped eating those things … at least my oatmeal and whole-grain bread were smart moves. I upped my water intake to 12-15 glasses a day and I am okay now. Whether that was a one-time flare-up I don’t know but it was a heck of a warning bell for me. That first week, before I could research everything to give myself a balanced and healthy diet again, I barely ate – I was afraid to. Oh, I am on tart cherry cherry concentrate which you mix with water. Here in Michigan the cherries are not out yet and it is supposed to be one of the best things to counteract gout. I wrote a blog about it but I pretty much told you everything I mentioned in the blog … people who know me and my very boring diet (before the gout … worse now) were shocked. I was too. I haven’t eaten anything exciting or tasty in years. 🙂

    1. Oh man! That sounds so rough! I’m glad that making even further changes to your diet helped, but that’s so unfortunate. I LOVE food and even a gluten-free diet is a lot for me😰 Do you find yourself eating the same types of meals repeatedly?

      1. Joezette – I had a tingling on the top of my right foot for about a year – felt like a wrinkle in a sock, but dismissed it as nothing – guess that was the precursor. This came on very suddenly with the big toe – the redness and swelling and couldn’t walk. Google was helpful. The diet plan I followed before was monotonous; now even worse. I’m being very careful as I will try to avoid any medicine for it if possible. My mom had many medical issues (she was hit by a car at age 11 and had over 40 orthopedic operations in her lifetime). I saw my mom’s many pills, and the side effects through the years, plus she had cellulitis in her legs – the infection would rear its ugly head from time to time, necessitating a stay in the hospital on antibiotic drip, or twice-daily visits to an infectious disease clinic, so I figured I’d stay the course, no matter how boring or blah … I am sorry that I did this to myself, while thinking I was eating very healthy. I’ve never taken my good health for granted and feel very blessed to enjoy good health. Heart disease runs in my family on my mother’s side (7 siblings and her all died of heart disease), so I was being heart smart, along the walking. I’m not a good cook and it’s just me so no one else has to share these un-exciting foods.
